It’s become a competition among us – who can make the most mouthwatering, finger-licking, fall-off-the-bone chicken?

My kids even love to get involved in the process. They get a kick out of flattening the bird and slathering on the sweet bbq sauce, making sure every inch is coated to perfection.

And when it’s finally time to dig in? Let’s just say there’s no polite way to eat this chicken. It’s all fingers, all messy, all delicious.

But it’s not just about the taste. There’s something special about the act of spatchcocking – the satisfying sound of the chicken flattening out, the precision required to get just the right seasoning. 

It’s a ritual that brings us all together, and we look forward to it every year.

What are the benefits of roasting a Weber Q spatchcock chicken?

Spatchcock chicken, also known as butterflied chicken, is a method of preparing a whole chicken for cooking.

The chicken is laid flat, with its backbone removed and its breastbone cracked open to flatten it out.

The term “spatchcock” is believed to have originated from a combination of the words “dispatch” and “cock”, – suggesting a quick and easy method of preparing a bird for cooking.

Spatchcock chicken can be grilled, roasted, or cooked in various ways and is a popular dish for BBQs and family gatherings.

It’s also an excellent option for those looking for a healthier alternative to traditional roasted chicken, as it allows excess fat to drip away during cooking.


Ingredients you’ll need to make Weber Q spatchcock chicken

So you wanna make some mouthwatering Weber Q spatchcock chicken?

I’ve tried to keep this recipe as simple as possible, so I’ve gone for an award-winning rub from Lane’s BBQ and a brush on sweet BBQ sauce.

Don’t worry. It’s all pretty simple stuff – just make sure you’ve got everything on hand before you fire up the grill.

And trust me, the end result is more than worth it. Get ready for some seriously juicy and flavorful Weber Q spatchcock chicken!

You’ll Need the following:

  • Whole chicken (around about 2kg (4 ½lb)

Of course, you don’t have to use my choice of rub, but luckily, I have a few alternatives.


Should you rinse chicken before cooking it?

Ah, the age-old question – should you wash your chicken before cooking it?

Here’s the deal: it’s actually not a good idea. Washing a chicken can actually spread harmful bacteria, like salmonella, all over your kitchen. 

Nobody wants that, right? Instead, focus on cooking your chicken to the appropriate temperature (165°F/74°C) to make sure it’s safe to eat.

Plus, washing the chicken won’t do much to eliminate any bacteria that might be present, anyway.

So save yourself the hassle and extra work and skip the wash.


How to spatchcock a chicken?

Alrighty, let’s get ready to spatchcock! First, grab a pair of kitchen shears and a whole chicken – we’re about to get messy.

Turn the chicken breast side down, and locate the backbone (it’s the bony bit running down the middle). Now, take those shears and cut along each side of the backbone, all the way up to the neck.

How to Spatchcock a Chicken

Once you’ve got that out of the way, score the thin piece of cartilage between the breast bone using a sharp knife. (Don’t cut down too far).

Then flip the chicken over and use your hands to press down firmly on the breastbone until you hear a satisfying “crack”.

Congratulations, you’ve just spatchcocked a chicken! Wasn’t that easy? Now all that’s left to do is season your Weber Q spatchcock chicken up and get grilling.


Seasoning the chicken

Get ready to fire up your Weber grill for some mouthwatering cooking! 

Start by placing a convection tray onto the grill, ensuring you have a trivet in place.

Now, preheat your grill with the lid down for a solid 15 minutes, allowing it to reach the perfect temperature.

Weber Q Pre-heat and setup

For the Family Q model, preheat your Weber by setting both gas control knobs to the high position. This will ensure that your grill gets nice and hot.

While the grill is heating up, let’s prepare the seasoning for our chicken. 

First, drizzle olive oil over the chicken, ensuring it is fully coated. Then sprinkle Lane’s magic dust over the back.

Flip the chicken over and generously coat the entire chicken from top to bottom, and ensure not to neglect the sides.

Sprinkle the Rub on the Weber Q Spatchcock Chicken

Lastly, if you have a wireless meat thermometer, now’s the time to insert it into the thickest part of the chicken breast.

This will allow you to monitor the cooking progress and ensure your chicken reaches the perfect temperature.

Now, you’re all set to grill up a storm with your perfectly seasoned chicken on the Weber. Get ready to enjoy some finger-licking goodness!


Time to roast our Weber Q spatchcock chicken!

Let’s get cooking with your Weber Q! Place the chicken flat onto the trivet, making sure to tuck the wings.

Roasting and glazing a Weber Q Spatchcock Chicken

Close the lid and adjust the heat to medium/middle position, maintaining a temperature between 180°C (355°F) and 190°C (375°F).

For the Family Q model, turn off the small gas control knob and lower the large gas control knob to the medium/middle position.

Roast the chicken until there are roughly 20 minutes left in the cook or the chicken reaches 60°C (140°F), then carefully open the lid and baste the entire chicken with Lane’s BBQ Sauce.

The total cooking time should be around 50 minutes to an hour, depending on the size, or until the internal temperature reaches 74°C (165°F).

After roasting, loosely tent the chicken with foil and let it rest for 10 minutes.

Once rested, carve up your delicious creation and serve it piping hot. Enjoy!

How to spatchcock a chicken

  • Pat the chicken down with a paper towel (See Note 1). Cut along one side of the spine using a sharp pair of kitchen shears or scissors until you reach the bottom of the chicken. Then repeat on the opposite side and remove the backbone.
  • Using a sharp knife or cleaver, score along the cartilage between the top of the breastbone until it separates. Turn the chicken over and gently press down on the breast until you hear it crack. Now you should be able to open the chicken fully.

Season the chicken

  • Place a clean convection tray onto your Weber grill with a trivet and preheat your with the lid down for 15 minutes.
    Family Q: Preheat your Weber with both gas control knobs set to the high position.
  • Drizzle 2 tbsp of olive oil and rub it in. Then Sprinkle Lane's Magic Dust over the inside of the chicken, flip it over and generously season the other side. Make sure not to neglect the sides.
  • If you have one, insert a wireless meat thermometer into the thickest part of the breast to monitor your chicken.

Cooking the chicken

  • Carefully lay the chicken flat onto the trivet. Tuck the wings and close the lid of your Weber Q. Turn the heat down to the medium/middle position keeping the temperature between 180C (355F) and 190C (375F).
    Family Q: Turn the small gas control knob off and the large gas control knob down to the medium/middle position.
  • Roast the chicken until there are roughly 20 minutes left in the cook or the chicken reaches 60C (140F) internally, then carefully open the lid and baste the entire chicken with Lane's BBQ Sauce. The total cooking time should be around 50 minutes to an hour, depending on the size, or until the internal temperature reaches 74C (165F).
  • Loosely tent the chicken with foil and rest for 10 minutes, carve, then serve hot.

Notes

Note 1: Many people have been conditioned into believing you must wash a chicken before cooking it. This is simply untrue.
Washing chicken before cooking can spread harmful bacteria, causing illness. It serves no purpose.
Use a paper towel to pat the chicken dry before adding oil and rub.
Note 2: If you don’t have an instant-read meat thermometer handy, there is another way to tell if your chicken is safe to eat.
Simply prick a hole in the thickest part of the thigh or breast and check the colour of the juice that runs out.
If the juice is clear, it’s ready. If it’s pinkish, you’ll need to pop it back into the Weber for 10-15 minutes longer.
