Serving Size 8 people

Ingredients

  • 1.05 qt Chocolate Ice Cream 1 Litre
  • 500 g Choclate Mud Cake Sliced Thinly
  • 150 g Bread Crumbs
  • 4 Eggs
  • 1 tsp Cinnamon
  • Canola Oil For Deep Frying

Chocolate Breading Mix

  • 250 g Chocolate Cereal
  • 4 Eggs
  • Canola Oil For Deep Frying

Instructions

Prep The Ice Cream Balls

  • Slice up mud cake into thin slices and set aside.
  • Roll ice cream in small balls one at a time.
  • Lay a single slice of mud cake in the palm of your hand and place the ice cream ball into the center. Place another slice of mud cake over the top. Add further slices of mud cake to the left and right sides.
  • Gently press both hands around the ball turning and pressing the mud cake down until it has an even surface.
  • Use smaller pieces of mud cake to fill any gaps where ice cream is spilling out, and continue to press and turn in your hands.
  • Place ice cream ball into the freezer for at least 3-4 hours.

Breading Deep Fried Ice Cream Balls

  • In a bowl add bread crumbs and cinnamon.
  • In another bowl beat the eggs.
  • Preheat deep fryer to 190°C (375°F). If using a deep pan or shallow frying use a candy or infrared thermometer. It's important that the ice cream balls fry at this exact temperature to avoid burning the outside.
  • While preheating, take one ball out of the freezer and dip into the egg. Roll in the bread crumb mix until covered. And repeat the process of dipping back into the egg and breadcrumb mixture for a final time.
  • Gently place the ice cream ball into a deep fryer and roll around for 1-minute or until the outside is golden brown. The is no need to fully submerge the ice cream ball to fry successfully. But it is important to continue rolling the ball around to get a nice even fry.
  • Place deep-fried ice cream ball into a small bowl and serve with your favorite topping immediately.
  • Repeat this process until all ice cream balls have been deep-fried.

Chocolate Cereal Mixture (Optional Steps)

  • In a food processor add cereal and blend until it's a fine grain.
  • Repeat steps 2-6
