Place a clean convection tray onto the Weber Q, then place the trivet on top. For Family Q, turn both gas control knobs to the START/HI position.Close the lid and allow 15 minutes for the Weber Q to heat up.
Place the potatoes into a mixing bowl and drizzle a generous amount of olive oil over the potatoes, followed by garlic salt (optional).
Place the potatoes evenly onto the trivet. Use a fork to prick around each potato 4 or 5 times.If you have a Bluetooth meat thermometer, place a probe into the largest potato and push it in about halfway.
Close the lid, and turn the middle gas control knob to the off position. The large control knob should be turned down to the medium roast setting.For the Baby Q, turn the gas control knob to the medium setting.Try to always maintain a temperature between 190°C (375°F) and 230°C (446°F) at all times. Bake for around 1 hr to 1hr 15 minutes depending on the size of your potatoes. Check on your potatoes at the 45-minute mark using a fork to feel the potatoes firmness.
If you are using a Bluetooth meat thermometer, the internal temperature of baked potatoes needs to reach98°C (208°F) for doneness.
Prepping For The Second Bake
Once the potatoes have have reached 98°C (208°F), take them out of the Weber Q and set them aside to cool. Leave your Weber Q on low to keep it hot.
Chop bacon into small pieces and dice an onion.In a frying pan (skillet) place 2 tablespoon butter and pre-cook the diced onion and bacon for 4 minutes then set aside.
Once the potatoes have cooled begin cutting them in half and gently scoop out the potato into a mixing bowl. Try not to begin scooping from the edges. Scoop out all of the potato from each one until you can almost see the bottom. Then set the skins aside.
Add milk, butter, and crushed garlic to the potato and begin mashing. Mash the potato until you reach the desired smoothness. (see note 2)
Next, add cheese, rosemary, spring onion, pre-cooked bacon, onion, salt and pepper to the mash and mix thoroughly.Important: Save some cheese and bacon for the topping.
Begin scooping the potato mix back into each potato until it is level. Sprinkle some more cheese on top and add some more pre-cooked bacon.
Carefully add the potatoes back to the Weber Q and bake for approximately 15 to 20 minutes on the medium roast setting, or the cheese is golden brown.
Serve with sour cream and spring onion or chives. (optional) Enjoy!
Notes
I use garlic salt to help dry out the skin and give the potato more flavour.
I like my mashed potatoes to be a little lumpy in a twice-baked spud, it actually tastes better than a traditional buttery smooth mash. But it is completely up to you.
