Total Time 35 minutes
Serving Size 4 people

Ingredients

  • 640 g skinless chicken breast 2 chicken breasts filleted
  • 4 tbsp lemon juice fresh
  • 3 garlic cloves
  • 1 tsp ground coriander
  • ¼ tsp cumin
  • 1 tsp sweet paprika
  • tsp chilli powder
  • ½ tbsp sea salt
  • ½ tsp black pepper
  • ½ bunch fresh parsley
  • ½ bunch fresh coriander

Instructions

Marinade

  • Add all ingredients to a food processor, except for fresh coriander, parsley and chicken. Pulse ingredients 6-7 times to mince the garlic.
  • Next, add the fresh coriander and parsley and pulse until it has a chopped appearance. Try not to pulse to the point the fresh herbs looked like a puree.
  • Fillet chicken breasts into halves lengthwise, then place them into a ziplock bag. Next, pour the marinade into the bag and toss the bag to evenly coat the chicken. Then place into the fridge for a minimum of 4 hours. (Overnight is ideal)

Grilling the chicken

  • Remove the chicken from the fridge and bring it to room temperature for at least 1 hour.
  • Preheat your Weber Q for 10 minutes with the lid closed by turning the gas control knob/s to the START/HI position.
Family Q Instructions - Turn both gas control knobs to the START/HI position.
  • Place the chicken onto the centre of the Weber Q and grill for 5-6 minutes per side or use an instant-read meat thermometer and grill until the internal temperature of the chicken reaches 74°C (165°F).
  • Rest for 5 minutes and serve.

Notes

If you don’t have a Weber Q or you would prefer the baked version, simply bake (covered) for 35 minutes. Then uncovered for a further 5 minutes at 190°C (375°F).
Serve with homemade tzatziki sauce, you won’t know what’s hit you. The flavours from the tzatziki work amazingly well with Moroccan chicken.
