Grilled Weber Q Devilled Sausages

Delightfully rich and hearty with just a pinch of cayenne, these Weber Q devilled sausages are cooked entirely on the grill and come together in only one pan.

Ingredients
  

  • 12 pork sausages beef is also fine
  • 1 medium brown onion sliced
  • 2 garlic cloves minced
  • 1 red or green apple peeled, cored, and thinly sliced
  • 1 400g tin of diced tomatoes I used Italian diced tomatoes
  • 1 cup beef stock
  • 2 tablespoon Worcestershire sauce
  • 1 tablespoon wholegrain mustard or ½ tablespoon Dijon mustard if preferred
  • 1 teaspoon dark soy sauce
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper add ¼ teaspoon increments if you want it hotter
  • 2-3 sprigs of fresh thyme
  • 1 teaspoon corn flour/cornstarch
  • salt & black pepper to taste
  • 2 tablespoon olive oil for frying

Instructions
 

  • Preheat your Weber Q for 10 minutes on high. Family Q: Turn both gas control knobs to the START/HI position.
  • Once preheated, place the sausages directly onto the grill, and pack them tightly together to help retain as much moisture in the sausages as possible. Baby Q: Leave the gas control knob on high. Family Q: Turn the small gas control knob to the low position and leave the Large gas control in the high position. Grill the sausages for 2-3 minutes per side until golden, and make sure they are grilled with the lid down.
  • Once grilled, wrap the sausages in aluminium foil to keep them warm and set aside.
  • Place the Weber Q casserole dish (recipe note 1) or similar onto the centre of the grill and turn the heat back up to high. Fry the chopped onions until they soften, then add sliced apples. Continue frying until both begin turning golden, then add garlic and stir for 1-2 minutes until fragrant. (recipe note 2)
  • In a jug, combine 1 cup beef stock and 1 teaspoon corn flour/cornstarch and stir until there are no lumps. Pour the stock into the dish with one 400g can of diced tomatoes and 2-3 sprigs of fresh thyme, then stir until the tomatoes begin to boil.
  • To the casserole dish, add 1 teaspoon smoked paprika, ¼ teaspoon cayenne pepper, 2 tablespoon Worcestershire sauce, 1 teaspoon dark soy sauce, and 1 tablespoon wholegrain mustard. Stir until well combined, then season with salt & pepper. Taste the sauce and adjust it to your liking.
  • Slice the sausages into smaller pieces and place them back into the casserole dish. Mix the sausages through the sauce and put the lid on the dish.
  • Baby Q: Turn the heat down to low and simmer with the lid down for 10 minutes, turning halfway to avoid the sausages burning. Family Q: Turn the small gas control knob to the low position and the large gas control knob off and simmer for 10 minutes, stirring halfway.
  • Serve hot on a bed of creamy mashed potatoes and garnish with fresh spring onion or chopped parsley. Enjoy!

Notes

Note 1: I use the official Weber Q casserole dish set. Because of its removable handles, this allows you to place the dish on and off the grill safely.
Note 2: I found it better to keep the lid of my Weber down whilst frying and opening it every minute or 2 to stir to avoid burning. This kept the heat up and helped turn the apples and onions golden.
Note 3: You can use red or green apples, depending on your flavour preference. When selecting your choice of apple, the sweeter varieties will balance out the spices in the sauce and the tanginess of the Worcestershire sauce. I used granny smith in this recipe.
Note 4: Devilled sausages will keep in the fridge for 2-3 days. Allow to cool, then tightly cover in a container. To reheat, place on the stove on low heat and add a splash of water to loosen the sauce if required. Cook until the sausages are piping hot, then serve.
