Peel 5-6 fresh medium to large size potatoes, preferably Desiree or brushed potatoes. Slice potatoes into halves and set aside.
Fill a large pot with 2 litres of water and add 1 tablespoon of salt and 1 tablespoon of Bi-Carb soda, and stir until the Bi-Carb has dissolved. Add potatoes into a large pot and set on High until boiled. Once potatoes have boiled turn the heat down to simmer for 10mins. Place into a colander and leave to cool down and dry.
When potatoes have dried, begin gently tossing potatoes in the colander until they form rough edges.
While waiting for water to boil, place a convection tray onto the Weber Q making sure to keep the tray perfectly centred on the grill. Then place a trivet onto the convection tray.
Make sure the gas is on and turn the control knob to the START/HI position. And ignite your Weber Q. If you have a thermometer place it inside the weber Q. Close the lid and Preheat Weber Q for 10-15 mins.
Place potatoes onto a tray and cover with a generous amount of olive oil until all potatoes are completely covered. Sprinkle garlic salt, rosemary, and thyme over the top of all the potatoes.
For maximum flavour, place potatoes around the meat to absorb its smokey goodness. It is also perfectly fine to roast potatoes on their own.
Close the lid on the Weber Q and turn the control knob to the roast setting and leave for at least 1 hour. Making sure to monitor and adjust the temperature between 190°C (374°F) and 230°C (446°C). And no peeking. After 1 hour quickly lift the lid to check. If potatoes are not golden brown as of yet, add another 10-15 mins of roasting time.
