This easy to make potato salad with egg and bacon is great not just for the family BBQ or picnic, but to have as a side dish at home any time of the year.

Ingredients
10Medium Potatoes
8Eggs
1cupDiced Rindless Bacon
1cup Spring Onion
490gMayonnaise
Instructions
Peel and cut the potatoes into 2 cm pieces. Then boil in well-salted water until cooked. Be careful not to overcook them.
While the potatoes are cooking, cook the eggs until they are hard-boiled. Drain and allow to cool in cold water until cool enough to hold and then peel.
If you are not already using pre-diced bacon pieces. Cut your bacon into small pieces, making sure you remove all the rind. Saute the bacon pieces and put them aside to cool.
Once the potatoes are cooked through, drain and leave to cool down.
Place the cooled potatoes into a large bowl. Cut eggs in half and then cut each half in quarters.
Add the bacon pieces to the potatoes and eggs. Chop the spring onion sprigs (enough to fill 1 cup), then add to the bowl.
Add the mayonnaise to the bowl and thoroughly mix through.
Notes
Serve with cold cuts, your favourite steak or other salads.
