Instructions
Preparing the Chicken
Allow 1-2 hours for the chicken to come up to room temperature.
In a mixing bowl, combine brown sugar, paprika, garlic powder, onion powder, chili powder, salt and pepper and mix.
Beginning from the neck, gently separate the skin from the breast with your fingers until you can reach the bottom. Try not to tear the skin here.
In a small bowl, add the butter and crushed garlic and mix well. Brush the bacon rashes with garlic butter on both sides.
Gently push the bacon between the skin and the breast from one side to the other. Make sure there is a slight overlap between each strip of bacon.If you are having trouble getting the bacon to flatten out, use the other end of a fork to manoeuver the bacon into place.
From the bottom cavity, sprinkle a small amount of crushed garlic and salt & pepper.Spread around the cavity with your fingers.Cut a lemon in half and insert both pieces. Finally, tie the legs together with some cooking twine.
Drizzle olive oil over the chicken until it covered entirely, and cover the chicken with my delicious herb rub.
Setting Up Your Weber Q
Place a new convection tray onto the centre of the grill. Then place your trivet on top.
If you are using the Weber Family Q, turn both gas control knobs to the START/Hi Position and light the grill, and close the lid.Allow your Weber to heat up for 15 minutes.
Cooking The Chicken On The Weber Q
Place the chicken onto the centre of the trivet, insert a meat probe (if applicable) into the thickest part of the breast. Try not to touch the bone, and finally close the lid.
Turn the small gas control knob to the off position, and the large gas control knob to the medium (middle) roast position.For Baby Q, turn the gas control knob to the medium (middle) position.

Try to maintain a temperature at all times between 190°C (374°F) and 230°C (446°C) by adjusting the gas control knob accordingly.
The roast chicken will ready to take out of the Weber Q once it reaches at least 71°C (160°F) internally. Rest for 15 minutes.While resting the temperature will continue to rise another 3°C bringing the chicken up to a safe eating temp of 74-75°C (167°F).

Weber Q Roast Chicking Cooking TimeCooking on the Weber Q is very different when compared to your oven at home due to it cooking at higher temperatures.The following is simply a guide to determine the cooking time and can vary depending on the weight of the bird and the temperature of your Weber Q.Add 20 minutes of roasting time for every 500 grams that the chicken weighs and is cooked at roughly 200°C (390°F)For example, if a chicken weighs 2.6kg (5.7lbs), the total cooking time of roast chicken would be 110 minutes. Or 1 hour and 50 minutes.
