Ingredients
2Egg Yolks
2tspDijon Mustard
500mlLight Olive Oil
2tbspWhite Wine Vinegar
½Lemon
pinchGround Sea Salt
Instructions
Whisk egg yolks and Dijon Mustard in a large mixing bowl. Refer to Notes for blender tips.
Pour 250mls olive oil extremely slowly while whisking.
Whisk in the white wine vinegar, then continue adding the rest of the oil while whisking.
Squeeze the ½ lemon into the mix, add a pinch of ground sea salt and wisk until combined.
Place into an airtight jar or container and store in the refrigerator for 1 week.
Notes
Using a Blender:If you wish to use a blender to make this, follow the steps above.Have your blender on a high speed to whisk the eggs, (or whisk the egg yolks by hand and place in the blender) then keep at a high speed continuously while adding your ingredients until all the steps are completed.
