Remove the silverskin and any thick pieces of fat from the meat. Next, cut 5mm (¼”) thick slices of beef across the grain, cutting at an angle.
Add the beef and seasoning ingredients to a large bowl, then mix until well combined. Cover the bowl with plastic wrap and set it aside in the fridge for a minimum of 2 hours. 24 hours is ideal.
When threading the meat on skewers, soak bamboo in water for 10 minutes. Otherwise, zig-zag each piece of meat onto the skewers. Ensure there is enough beef to make six skewers, and the beef is not tightly packed.
Spicy peanut sauce
Combine the peanut sauce ingredients minus water into a saucepan and whisk over medium-low heat. Simmer for 5 minutes, stirring occasionally.
Adjust the consistency by adding water. The sauce should be slightly thick but not runny.
Serve the sauce warm in a small bowl, or spread evenly over the skewers.
Grilling satay beef skewers
Pre-heat your Weber Q on high for 10 minutes with the lid down.
Place the kebab rack or skewers directly onto the centre of the grill. Close the lid and grill on high for 4-5 minutes per side or until slightly charred. 10 minutes total.
Family Q: Turn the small gas control knob to low, but leave the large gas control knob on high. Grill until the internal temperature reaches 60°C (140°F) internally.
Serve alongside the spicy peanut sauce, and enjoy!
