Weber Q Satay Beef Skewers with Peanut Sauce

Ingredients

Skewers

  • 1.2 kg beef skirt steak

Seasoning

  • 2 tbsp coriander powder
  • 1 ½ tsp cumin
  • 1 tbsp turmeric
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 tbsp fish sauce
  • 3 tbsp vegetable oil

Spicy peanut sauce

  • 1 ½ tbsp smooth peanut butter
  • 2 tsp brown sugar
  • 1 tsp light soy sauce
  • 2 tsp rice vinegar
  • 2 tsp sriracha hot sauce or any other hot sauce
  • ½ tsp lemongrass paste
  • cup coconut milk
  • ¼ cup water

Instructions

Preparing the skirt steak

  • Remove the silverskin and any thick pieces of fat from the meat. Next, cut 5mm (¼”) thick slices of beef across the grain, cutting at an angle.
  • Add the beef and seasoning ingredients to a large bowl, then mix until well combined. Cover the bowl with plastic wrap and set it aside in the fridge for a minimum of 2 hours. 24 hours is ideal.
  • When threading the meat on skewers, soak bamboo in water for 10 minutes. Otherwise, zig-zag each piece of meat onto the skewers. Ensure there is enough beef to make six skewers, and the beef is not tightly packed.

Spicy peanut sauce

  • Combine the peanut sauce ingredients minus water into a saucepan and whisk over medium-low heat. Simmer for 5 minutes, stirring occasionally.
  • Adjust the consistency by adding water. The sauce should be slightly thick but not runny.
  • Serve the sauce warm in a small bowl, or spread evenly over the skewers.

Grilling satay beef skewers

  • Pre-heat your Weber Q on high for 10 minutes with the lid down.
  • Place the kebab rack or skewers directly onto the centre of the grill. Close the lid and grill on high for 4-5 minutes per side or until slightly charred. 10 minutes total.
  • Family Q: Turn the small gas control knob to low, but leave the large gas control knob on high. Grill until the internal temperature reaches 60°C (140°F) internally.
  • Serve alongside the spicy peanut sauce, and enjoy!
