This Easy Berry Fruit Salad Recipe with a Mint Dressing is a delicious and refreshing summer treat! This recipe is quick and easy to make, and it’s perfect for snacks, desserts or even a quick breakfast.

The mint dressing adds a fresh and flavourful twist to the classic berry fruit salad.

I have to admit I am not one to eat blueberries and raspberries on their own. But I love them when they are combined with other ingredients.

This is why I have created this delicious berry fruit salad with mint dressing.

What is great about this recipe is that it makes for a quick and easy breakfast or snack when combined with yoghurt or served as a dessert with a scoop of ice cream.

Or you can get even more creative and blend it all to make a smoothie. Or add other berries, such as blackberries, to the mix.


How to make Easy Berry Fruit Salad Recipe with a Mint Dressing

Ingredients:

  • 1 cup strawberries, hulled and quartered
  • 1 cup raspberries
  • 1 cup blueberries
  • 1/4 cup sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon mint leaves, finely chopped

Instructions:

Slice the green leaves off the strawberries and cut them into quarters. Alternatively, you can hull them. Refer to the below on how to do this.

Then, combine the strawberries, raspberries, and blueberries into a large bowl.

Whisk the sugar, lemon juice, and mint leaves in a small bowl.

Then, drizzle the dressing over the berries.

Serve immediately or store in an air-tight container till you are ready to serve.

Tips:

For a sweeter dressing, add more sugar.

For a more tart dressing, add more lemon juice.

Garnish with additional mint leaves, if desired.

Serve with a scoop of vanilla ice cream or whipped cream for a special treat.

How to hull a strawberry

To hull a strawberry, simply remove the green leafy top, called the calyx. You can do this with a paring knife or a strawberry huller.

If you are using a paring knife, insert the knife into the strawberry at a slight angle, just below the calyx. Cut around the calyx in a circular motion, being careful not to cut into the flesh of the strawberry. Once you have cut around the calyx, gently pull it away from the strawberry.

If you are using a strawberry huller, simply insert the huller into the strawberry and twist. The huller will remove the calyx and the core of the strawberry.
