I love making these. A quick, simple lunch for the kids. Or something to give to friends and family when we are entertaining.

I even find these Cheese and Bacon Pinwheels Wrapped in Puff Pastry go down a treat at events such as birthdays or Christmas.

And if you are not a fan of cheese, egg and bacon, you can use anything you like as a topping.

Add mushrooms, pineapple, capsicum, even anchovies if you like them. My husband Shannon even wants me to add slices of pepperoni from time to time.

Whatever you like as a pizza topping, you can add as a filling to these mini pinwheels.

How to make Mini Cheese and Bacon Pinwheels Wrapped in Puff Pastry

There is one little tip I do have for you when making these. Whatever you plan to add as your filling, chop it up small, so it rolls easier.

Ingredients

Pizza Base Tomato Paste (or regular tomato paste)

Egg

Bacon

Grated Tasty Cheese (or a cheese of your choice)

Puff Pastry

Method

I find it much easier to use the frozen puff pastry with this, but feel free to make your own if you wish.

Start by preheating your oven to 220°C, then layout your pastry to thaw.

Dice up your bacon into small pieces and whisk your egg.

Heat some olive oil in a frypan and add the bacon. Fry for a few minutes until just starting to brown.

Remove the bacon and place on some paper towel to drain and cool.

Wipe the frypan clean, and then add the whisked egg and scramble.

Then remove and set aside to cool.

Spread the pizza base tomato paste over the puff pastry. If you don’t have the pizza base on, regular tomato paste is great to use also.

I like to use the pizza one to give the Cheese and Bacon Pinwheels a more pizza-style taste.

Once the pastry sheet is completely covered, sprinkle the cooled bacon, then the cooled egg, followed by the grated cheese.

Starting from the bottom end of the pastry, roll it upwards until the top edge is underneath. Then carefully flip it over so the edge is on top.

Cut the roll in half, and then each half in half again.

Then to make it easier, score each quarter into thirds. I suggest scoring first so you can get each slice as even in thickness as possible before cutting.

Once cut, place each slice on its side on a lined baking tray and place it in the oven to cook for 15 minutes or until the pastry is golden brown.

Once ready, place the mini pinwheels onto a cooling rack to cool.

The Cheese and Bacon Pinwheels Wrapped in Puff Pastry can be eaten either hot or cold.
