Cheesy Broccoli And Cauliflower Fritters

Perfect for breakfast or lunch. Even have these as appetizers if you are looking for something different to serve when entertaining.

You can have fun adding all kinds of ingredients to fritters. But for this recipe, I want to add grated broccoli and cauliflower and some basil, sage and parmesan cheese.

How to make cheesy broccoli and cauliflower fritters.

They are super easy to make, and if you want them for breakfast, you can even grate everything the night before. Just cover and place in the refrigerator to keep fresh.

Batter Ingredients

  • Plain Flour
  • Baking Powder
  • Salt
  • Pepper
  • Egg
  • Milk
  • Olive Oil

Filling Ingredients

  • Parmesan Cheese
  • Broccoli
  • Cauliflower
  • Brown or Red Onion
  • Garlic Cloves
  • Salt
  • Black Pepper
  • Basil
  • Sage

Filling Method

Before you start your batter, you should prepare everything that is going to be added.

Grate the broccoli and cauliflower and finely grate the parmesan cheese, or you can use pre-grated.

Finely dice the onion and garlic cloves, finely chop the basil and sage.

Heat 1 tablespoon of oil in a frypan, add the chopped up garlic and saute until brown. Add the onion and continue to saute for a further minute. 

Turn the heat down to medium, add the broccoli and cauliflower and constantly stir for a few minutes.  

Add the basil, sage, salt and pepper and continue frying over medium heat until the broccoli and cauliflower are soft. Then remove from the heat and set aside to cool.

Batter Method

Sift the flour and baking powder into a large bowl. The baking powder helps the fritters to rise and helps give them the fluffy texture inside.

Light whisk an egg and add it to the flour, along with the milk, salt and pepper. Then whisk all the ingredients together until smooth.

Add a slight drizzle of olive oil to the batter and whisk through. The oil helps to relax the mixture, and it also keeps your fritters moist on the inside.

Be careful not to add too much oil as it will make your batter runny.

Once the batter is ready, add your cooked broccoli and cauliflower mixture to the batter, along with the grated parmesan cheese.

Then using a spoon, combine everything.

Cooking the cheesy broccoli and cauliflower fritters

Heat two tablespoons of olive oil over low heat. Add a large spoon full of the mixture to the frying pan, and using the back of the spoon, spread the mixture out to form a circle.

Cook the fritters for around 1 and 1/2 to 2 minutes a side or until golden brown.

Serve on their own or with scrambled eggs for breakfast.

With your favourite dipping sauce if you are entertaining.

Or serve with chips, salad or wedges if you have them for lunch or even a light dinner.

Ingredients

  • cups Plain Flour
  • ½ tsp Baking Powder
  • Pinch Salt
  • Pinch Pepper

  • 1 cup Milk
  • Drizzle Olive Oil

Filling Ingredients

  • ¾ cup Parmesan Cheese
  • cup Broccoli
  • cup Cauliflower
  • 1 medium Brown Onion or Red if you prefer
  • 2 Garlic Cloves
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • ½ tbsp Basil
  • ½ tbsp Sage

Instructions

  • Filling Method
  • Grate Parmesan, Broccoli and Cauliflower. Finely dice onion and garlic, and finely chop the basil and sage.
  • Heat 1 tablespoon of oil in a fry pan, add garlic and saute until brown. Add onion and continue to saute for a further minute.
  • Turn heat down to medium, add broccoli and cauliflower to the frypan and cook for a further few minutes, while constantly stirring.
  • Add the basil, sage, salt and pepper, and continue frying until the broccoli and cauliflower is soft. Then remove from the heat and set aside to cool down.

Batter Ingredients

  • Whisk well until the batter is smooth. Add a small drizzle of olive oil to relax the batter and whisk through until combined.
  • Add the cooked filling and the parmesan cheese to the batter and with a spoon mix through.

Cooking

  • Heat 2 tablespoons of oil over low heat. Once hot add a large spoonful of the mixture to the frypan. Using the back of the spoon, spread the mixture out to form a circle.
  • Cook for around 1½ to 2 minutes a side or until golden brown.
  • Drain on some paper towel, then serve.
