I first tried deviled eggs at a family Christmas lunch as a child. And I fell in love with them.

As my family grew and we got together with the rest of the family or friends, I made deviled eggs for appetizers or as a finger food option.

But I wanted to do something different than the classic curried deviled eggs, adding Dijon mustard and crispy bacon into the mix, and the taste is phenomenal. Even my husband, who is not a fan of deviled eggs, loves them.


How do you make Curried Deviled Eggs with Bacon?

Ingredients:

  • Large eggs
  • Bacon, cooked and finely chopped
  • Mayonnaise
  • Curry Powder
  • Dijon mustard
  • Salt and pepper to taste
  • Chopped bacon and chives for garnish (optional)

Instructions:

Place the eggs in a single layer in a large saucepan and cover with cold water. Bring to a boil over high heat, then reduce to a low heat and cook for 4 to 5 minutes. You want hard-boiled eggs.

Note: cook time depends on the size of your eggs.

While the eggs are cooking, cook the strips of bacon until crispy, then set aside to cool completely. Finely chop up the bacon, then put around 1 teaspoon of chopped bacon aside for garnishing.

Once the eggs are ready, drain them and add them to an ice-water bath immediately, allow them to sit for 5 minutes, and then peel.

Pro Tip: the ice water bath stops the eggs from cooking further and makes peeling easier.

Peel the eggs and cut them in half lengthwise. Remove the yolks and place them in a medium bowl.

Mash the egg yolks, then add the mayonnaise, djion mustard, curry powder, salt, pepper, and crumbled bacon. Mix everything together, and add more salt and pepper if needed.

Spoon the filling into the egg white halves. Garnish with chopped bacon and chopped chives (optional) and serve.
